I hope everyone had a fabulous Labor Day Weekend. Ours was low key and relaxing.
For most of you it probably feels like a Monday right now….I know it does for me.
I fell asleep on the couch last night, woke up around 3:00 this morning and wasn’t able to get back to sleep. I had lots of energy when I got out of bed but am prepared to crash any second now.
I started the morning off with a homemade Pumpkin Spice Latte variation. With all the posts this weekend about Starbucks releasing the Pumpkin Spice Latte early I was craving one but didn’t want to spend the money or consume the sugar. So, I made my own version by adding cocnut milk, vanilla stevia and pumpkin pie spice to my coffee. This will hold me over for a while until I decide to splurge.
Speaking of splurging, want to know what my “cheat meal” was this week??
Oh yeah, Sweet Frog happened. This was my first fro yo of the season and will likely be my last. It was good but I think my sweet tooth is satisfied for now. Cheats just aren’t as fun as they used to be.
I mean how will I ever look like this if I keep cheating on my diet?
hahaha. My sister’s fiance sent that to me yesterday with the caption, “Britt, what have you been putting in that juicer?”. Obviously he’s an ass – lol. J and I definitely got a kick out of that.
In healthier news my first homemade roaster chicken experience was a huge success!
The lighting makes the chicken look a little undercooked but I promise it was perfect. Check out the Against All Grain Cookbook for the recipe. I’ll be talking about cooking with whole chickens in my upcoming Clean it Up series for those of you who are interested.
Well I’m off to work. But before I go I have to share this picture of Champ and Livy because, well, I’m obnoxious like that…
I just love when they put their “arms” around one another when they cuddle. So cute!
Q: Do you have a recipe for a homemade pumpkin spice latte? Any tips for cooking with a whole chicken?
